Staying motivated and feeling inspired to make healthy packed lunches for your kids each day can take some effort, but with a week's worth of quick and easy lunch box ideas up your sleeve you'll never have to make sandwiches again!
Day 1 - Rainbow Tortilla Pinwheel Rolls
These rainbow tortilla pinwheels look amazing in the lunch box, and kids love them! Simply spread houmous or mashed avocado all over the torilla to act as a 'glue'. The make stripes of different coloured vegetables from the top to the bottom of the tortilla, roll it up and cut into 2-3cm slices. Display on their side so that the full rainbow can be seen!
Day 2 - No-dough Pizza Slices
These pizza slices are something your child will love you for! Simply add a tomato paste onto a wholemeal pitta bread, sprinkle on some cheese and any other toppings your child enjoys. Pop in a hot over for about 6 minutes and cut into sllices when slightly cooled.
Day 3 - Simple Pasta & Pesto
I'm not really sure I need to explain this one....pasta and pesto is any busy mum's go-to quick fodder for kids. I use vegan pesto, and you can add any other veggies and cheese of choice, for example feta which would go very well in this lunch box.
Day 4 - A Lunch of Nibbles
Kids just love nibbley food and this lunch box is quick and easy to put together, whilst requiring no cooking or baking. Perfect for a packd lunch being made quickly before the school run.
Day 5 - Lunch Muffins
If you do have a little more time on your hands to prepare the day before, some savoury muffins are great for lunch boxes as they fill you up, whilst also sneaking in some otherwise refused veggies!
These are courgette and cheese muffins, which can also be frozen to use throughout the week as needed.
360g Plain Flour2 tsp Baking powder1 Egg, beaten
2 tbps milkSalt and pepper100g grated courgette100g grated cheddar cheese
Mix all the dry ingredients together, then mix in the beaten egg, milk, courgette and cheese, the mixture is quite thick like a wet dough. Dollop into a greased muffin tin and bake for 25-30 minutes at 180c (170c fan).
